Production procedure
From the high-elevation slopes of the alpine tundra, NAMCHEw is traditionally crafted using ancestral techniques whose secret recipe originates in Namche, a historic bazaar at the foothill of Mount Everest, the world’s tallest peak. Our production process is a blend of time-honored methods and modern quality assurance, ensuring that each chew embodies the purity and richness of its Himalayan roots.
Traditional Crafting
- Milk Collection: Fresh milk is collected from yaks and cows grazing on the nutrient-rich grasses of the Himalayan highlands.
- Churning and Curdling: The milk is churned and curdled to separate the whey from the curds.
- Pressing: The curds are then pressed to remove excess moisture, forming solid blocks.
- Drying and Smoking: The blocks are dried and smoked over an open fire for several weeks. This natural preservation method not only enhances the flavor but also ensures a long shelf life without the need for artificial additives or preservatives.
